Ever thought of walking Lands end to John o Groats? Would take longer than your average holiday but the experience would fit snugly into examples you gave.
Coincidentally I was speaking to a guy in Taupo yesterday who when he gets back from NZ is in May/June going to spend 9 weeks walking with side trips John o Groats to Landsend
Guess you can afford 9 weeks when you have just retired
